Cooking Time: 1 hour 30 minutes
Rest time: 10 minutes
- 1 Free range chicken
- 2 cups of greens
- 2 teaspoons of honey
- 1 punnet of gooseberries
- 3-4 plums
Preheat oven at 180°C
Score chicken and sprinkle with salt.
Cook chicken for 1 hour and 20 minutes if small-medium in size. 1 hour 30 if medium to large.
While cooking the chicken start on your sauce:
Peel 2 plums
Chop 50g of gooseberries
150ml of water
2 teaspoons of honey
Simmer for 20 minutes and stir frequently
Push mixture through a strainer when finished.
For the salad:
Wash and chop Greens
Let the chicken rest for 10 minutes before carving.
