Something for ‘Meat Free Monday’ and also great to pack to take to work.
100g drained tinned chickpeas
1 cup of baby spinach or greens of your choice
1/3 cup of cooked beetroot
1/3 cup of baby tomatoes
1/2 cup of bell peppers
Drain and rinse chickpeas before weighing. Wash and prepare all other veggies. Place each ingredient ‘compartment’ style in a bowl or container.
Add a squeeze of lemon and salt to taste
